I’m not vegan but this Sunday I enjoyed a really healthy vegan four course – organic plant-based – lunch! I was excited about it because I’m always up for trying new things AND I get excited about eating things that are good for me…it makes the struggle between choosing a cheeseburger or a salad or chicken and veggies a lot easier if the only option is healthy! Also, Living Desert Ranch was super cute/eclectic.
There were artwork and succulents everywhere! Lots of really pretty glass art and then a lot of the house is also a gallery featuring Dunten Studios paintings – which you have to check out because Jared has used painting to find peace as he recovers from paralysis (he uses his mouth to hold the paintbrush to paint) and his talent is pretty incredible. On the menu was: A Mandarin Orange Walnut Salad, Carrot & Peanut Soup, Spaghetti Squash (which Sam & I make pretty frequently at home!), and Key lime Pie.

My favorite was definitely the key lime pie! Go figure! I was so amazed that I could eat something so sweet that was all good and nutritious!! WHAT?!
