Good Evening!! Here’s a YUMMY recipe I want to share with you all!
I had been staying with my parents last week due to Sam traveling and people renting out our house, so my mom requested that I cook them dinner one of the nights that I was with them. What to cook?!? I’m certainly no chef, but cooking for other people makes me feel pressured to turn out something great (and it doesn’t always, which is okay, it’s always fun trying something new regardless)! Mom had no suggestions of what she felt like eating so I went online to her Pinterest food board where I found something that sounded good to me! Haha. With all of this rain and dreary weather I decided we needed to eat food from more tropical regions! So I decided to make it a dinner theme night: Cuba and The Keys (I made individual Key Lime Cheesecake’s for dessert that I will definitely share in another post)!
The guy who shared this Cuban Sandwich recipe with The Chew won their Father’s Day cook-off award. His family actually immigrated from Cuba and he says this recipe has been in his family for generations! So it’s pretty much a legit Cubano!
The roast pork does take a bit of time in the crockpot, so if you are wanting to make this for dinner and need to put this in the crockpot early in the morning before work I’d suggest making sure everything is ready to go the night before. Like peeling the 20 garlics!!! And having everything handy for the “Boston Mojo” that you pour over the pork into the crockpot.

We also had baked (crispy) sweet potato fries with the sandwich and I’ll post that recipe later too! They actually turned out really well and are a good healthy alternative to doing the baked sweet potato circles that I do way too often!
