YOU GUYS, I ate the BEST pizza of my life, so far, last night! Our friend Jon had us over for a feast in exchange for delivering a dining room table that he is buying off of us. He made us 3 amazing pizzas – all homemade, dough, sauce and everything. While I’m still trying to get his dough recipe (because it is seriously perfect) I wanted to share with you guys the general recipe of hands down my favorite pizza of the three and probably of all-time (so far): “the mushroom pizza” as Jon called it.
Now before you rule out trying it if you don’t like mushrooms, let me tell you more about it, because I was beyond pleasantly surprised when I took my first bite…and then proceeded to eat the entire pizza and literally couldn’t refrain from saying “mmmm” after every bite. As I was watching Jon make the pizza I was a little unsure about it because there were a couple ingredients that I wouldn’t naturally eat on a pizza if I was left to choice. But here’s what he did. First, he boiled down mushrooms and onions in butter with a little bit of olive oil and salt, like boiled them way-way down to a very dark, but not black color. This was in essence what he used as the sauce of the pizza, it was the base layer that went right on the dough. And while it may seem wierd to not have any actual pizza sauce on the pizza it wouldn’t have tasted right. Trust me, the mushroom mix is bursting with enough flavor to use as a base. Next ,he covered the buttery-mushroom-onion-mix in freshly grated mozzarella cheese. Then, he proceeded to top the pizza with a generous amount of blue cheese. And here again I was surprised because I normally do not like blue cheese, but I was keeping an open mind, plus I always find fun in trying new things! And oh my goodness this pizza did not disappoint. But wait it’s not done! He went ahead and baked the pizza and once it was golden brown and fully baked he added dried cranberries on top as well as a few splashes of balsamic vinegar and a few splashes of white truffle oil. And voila, the BEST PIZZA I’VE EVER EATEN. The way all of the different flavors worked together on that pizza was quite the savory experience, and I promise you, even if you don’t like mushrooms or blue cheese you will love this pizza and want to make it for everyone you know! (Which by the way if you are reading this mom, Sam and I have to make this for you guys soon!)
