Woke up to news about the mass shooting in Vegas last night.... It's hard to fathom every time something like this happens, but at the same time it's not because I know that there is evil always at work in the world. I was thinking about how often Sam used to travel to Vegas with his last job and how many times we've walked down that strip, it gives me goosebumps just thinking about it... my prayers go up for the families of those lost and everyone who was there last night.
I've been just a little behind with my blog posts. Two weekends ago we celebrated Sam's 31st Birthday with my family and a one night staycation at an Airbnb downtown.
HOW is time passing so fast? Sam and I have been together for 7 years now and it blows my mind! Anyway, we celebrated his birthday the way any old married couple would 😉 We checked into our Airbnb and then took a solid 2 hour nap!
Afterward we grabbed some Braised Short Rib Nachos, Margaritas, and a molten brownie from Corner. We love the vibe of this place (kind of swanky, but also relaxed) - the people watching is always good because it's such a mixed crowd. We saw people in ball gowns grabbing a bite and then people like us in jeans and a t-shirt, a bachelorette party, a few date nighters. The food is also super good! We ALMOST made it to 11pm, but even with our 2 hour nap we were ready to get back to the Airbnb and go to bed after dinner!
The next morning we walked over to 24 Diner for some of the best chicken and waffles in Austin! Go here for some good breakfast when in ATX. It's worth the wait if there is one.
On the way to my parents house we stopped at a nursery so Sam could get some plants. If you didn't know by now, he LOVES his plants. There is no such thing as too many plants...which I can agree with if they look nice BUT what's really great is that he has set up a whole irrigation system outside so that I can't possibly kill them and don't really have to worry about watering them. House plants are a different story though... I've only killed one so far BUT it did come back to life!
That night we went out to eat at Yardhouse with the fam. Great food, lots of beer, fun cocktails, good place to watch sports.
We celebrated with a lot of food that weekend. The next night my mom cooked a feast! She made Balsamic Glazed Caprese Chicken with Lemon & Asparagus Orzo (SO GOOD YOU HAVE TO MAKE THIS) and a pretty cheese board.
THEN on his actual birthday when we finally made it home, I made Tasty's Chicken Cordon Bleu and a 2 ingredient Chocolate Soufflé that was so good we made it again two nights later! I've been trying different Tasty recipe's lately and so far they have all turned out really great and haven't been too hard to make. Definitely recommend checking it out if you're looking for some new recipes! Download the app, it's really neat.
So it was a pretty great weekend. Happy to have had 7 years with this guy and hoping for many many more.
