One of my favorite things to do lately is cook and because we move around so much whenever we are in the house for a week, it’s like being able to cook whatever I want helps me feel that there is some control and balance in my life. I can make this space my home for the week! Cooking helps me feel that.
It’s so funny to me now because when Sam and I first started dating I literally didn’t know how to cut an avocado properly. These days I enjoy it and I try to keep the meals balanced and more on the healthy side because I can control what we are eating when we are home. When we’re traveling or staying with someone else our diet isn’t as controllable and truthfully Whataburger can sometimes become a regular visit! So I strive for balance.
I’m going to share what a week of dinner ideas for two might look like at our house on any given week (I’ve made all of these things, some of them really often).
And then at the bottom you can find a printable grocery list for all of these meals!
Peel & cut sweet potatoes into thin french fry type slices
Soak in a bowl of water for an hour
Pat dry & coat evenly with 1-2 tsp on olive oil in a bowl
Season with 1tsp garlic powder, 1/2 tsp of onion powder & chili powder and 1 tsp of brown sugar
Bake for 15-20 minutes, flip fries and then bake for another 15-20 minutes
Pre-heat oven to 325
Cook salmon patties for 30 minutes
Cook rice & beans and mix together
Season Chicken w/ Salt, Pepper & Red Chili
Cook over medium – medium/high heat for 12-14 minutes
Make & top tacos.
(I left out some of the ingredients for the turkey meatballs from the post because I don’t think they’re necessary for good taste but visit post for cooking directions)
Flatbread Sprouted Grain Pizza
*side note* the last time I made this I forgot to take pictures because PIZZA. I’ll be doing another post on this soon – so pictures to come!
Cook Italian Sausage on medium-high heat for 17-20 minutes until fully cooked & cut into slices
Sautee Green bell pepper & red onion
Pre-heat oven to 400
Top the flatbread with sauce, mozzerella pearls, roasted garlic, sauteed veggies and italian sausage.
Cook the flatbread until cheese is melted
